Easy nut butter cookies! Use whatever you like; peanut, almond, abc, or whatever other nut butter you have.

Nut butter cookies
Ingredients
- 1 cup of nut butter
- 2/3 cup of melted butter
- 1/2 cup of brown sugar
- 1/2 cup of caster sugar
- 1 egg
- 2 cups of flour
- 1/3 tsp of baking powder
- Pinch of salt
- Optionally, vanilla bean paste to taste.
Method
- Preheat oven to 180C.
- Mix the sugars and the wet ingredients in a bowl, making sure the butter is room temperature-ish so it doesn't cook the egg.
- In another bowl, mix the baking powder, salt, and flour together.
- Sift the flour in 1/3 or 1/4 at a time, mixing in between.
- If you choose to mix anything into the cookies (e.g. seeds, chocolate, dried fruit, marshmallows), add them now and knead it through.
- Line a tray, preferably a pizza tray, with baking paper.
- Divide the dough into 1 tbsp-ish sized balls, or half the dough, then halve the half, then halve the half, until you have 32 balls. Spread them evenly across the tray. If using a pizza tray only 16ish will fit.
- Press the dough balls down with a fork, then rotate the tray and do it again to make a hash on top.
- Bake for about 12-15 minutes. They should go golden on the edges, but not fully brown.. Leave them for 10 or so minutes, then move them to a cooling rack.
Notes...
These are sooooo good with super dark chocolate drizzled over them. Yum.
I have made these with gluten free flour once, and they worked very well! As for butter and egg swaps, margarine, coconut oil, or a neutral oil work fine. Any fat really. The egg is used as a binder, so a flaxseed egg should work, but I haven't tested that.
