Oat muffins...
Baked oats as pre-portioned serves! They make a nice breakfast sweet.

Oat muffins
Ingredients
- 1 1/4 cup of oats
- 3/4 cup of milk
- 2 tbsps of nut butter
- 1 tsp of baking powder
- Pinch of salt
- 2 tbsps of sugar/allulose, or 1 tbsp of maple syrup
- Optionally, mix ins. See notes!
Method
- Preheat oven to 180C and grease or line a muffin tin
- Put about 2/3 of the oats into a food processor and process until they are mealy. Adjust this amount to your preference if you'd like.
- Put processed and whole oats into a bowl with other dry ingredients, and mix.
- Add in the nut butter (it mixes easiest if it is warm) and milk, and stir until you get a gloopy batter.
- Scoop into 6 muffin slots, and if adding any chunky things, do so now.
- Bake for about 20 minutes, add 5 if you put any fruit pieces into them, otherwise they have no structural integrity.
Notes...
You can add whatever you like to these. Some yummy combos I've done (all eyeballed) were raspberries and white chocolate, strawberry and dark chocolate, lemon juice (mixed in after the milk) and blueberry, cinnamon and nutmeg, and orange (juice and zest).
